German Style Potato Salad

Ingredients:
1 Tbsp olive oil
2 Lb red potatoes, halved
1/2 Tsp McCormick Celery Seed
6 H-E-B Premium Bacon, slices, cooked crisp and chopped
1/3 cup(s) apple cider vinegar
4 Tbsp brown sugar
1/2 cup(s) white onion, chopped
Instructions:
Preheat the oven to 400. place the halved potatoes on a lined sheet pan and drizzle with olive oil and celery seeds.
Roast the potatoes for 15 to 20 minutes or until tender and brown. remove from oven and set side.
Reserve 3 tbsp. of bacon fat in skillet.
Cook bacon until crisp.
Chop bacon and set aside.
Heat same skillet over medium heat and add bacon fat and onions.
Cook until golden (about 2 minutes).
Add sugar and vinegar
Bring to a simmer until sauce thickens.
Remove from heat.
Add cooked potatoes into warm sauce. Toss to combine.
