HEB German Style Potato Salad

German Style Potato Salad

Ingredients:

  • 1 Tbsp olive oil
  • 2 Lb red potatoes, halved
  • 1/2 Tsp McCormick Celery Seed
  • 6 H-E-B Premium Bacon, slices, cooked crisp and chopped
  • 1/3 cup(s) apple cider vinegar
  • 4 Tbsp brown sugar
  • 1/2 cup(s) white onion, chopped

 

Instructions:

  • Preheat the oven to 400. place the halved potatoes on a lined sheet pan and drizzle with olive oil and celery seeds.
  • Roast the potatoes for 15 to 20 minutes or until tender and brown. remove from oven and set side.
  • Reserve 3 tbsp. of bacon fat in skillet.
  • Cook bacon until crisp.
  • Chop bacon and set aside.
  • Heat same skillet over medium heat and add bacon fat and onions.
  • Cook until golden (about 2 minutes).
  • Add sugar and vinegar
  • Bring to a simmer until sauce thickens.
  • Remove from heat.
  • Add cooked potatoes into warm sauce. Toss to combine.
  •
