Pork Chops with Garlic Rainbow Chard & White Beans

Ingredients:

  • 1 tbsp canola oil, divided
  • 24 oz pork chops, about 3/4 to 1 inch thick
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 1 cup(s) onion, julienned
  • 2 garlic cloves, sliced
  • 1 lb bunch rainbow chard, sliced into strips
  • 1 15.5 oz. can white beans, rinsed & drained
  • 2 tbsp cooking sherry
  • 4 tbsp Gorganzola cheese, crumbled

 

Instructions:

  • Heat half of canola oil in a large nonstick skillet on medium-high.
  • Season pork chops with garlic powder and black pepper then sear several minutes on each side.
  • Remove to a plate, cover with foil and set aside.
  • Return skillet to heat and add remaining oil. Add onions and cook 2 to 3 minutes.
  • Add garlic and rainbow chard. Cook several minutes, stirring frequently, until chard is wilted.
  • Stir in beans, sherry and any residual juices from the pork chops.
  • For each serving place greens with beans on a plate, top with a pork chop and a small sprinkle of cheese.
