SAN ANTONIO – Pumpkin Streusel Coffee Cake

Ingredients:
- 200 grams brown sugar
- 64 grams all-purpose flour
- 120 grams toasted pecans
- 4 grams cinnamon
- 86 grams butter, melted
Batter
Ingredients:
- 150 grams canola oil
- 150 grams sugar
- 150 grams brown sugar
- 366 grams pumpkin puree\
- 170 grams sour cream
- 3 eggs
- 1 1/2 teaspoon vanilla
- 381 grams flour
- 2 grams baking soda
- 6 grams baking powder
- 2 grams salt
- 2 grams cinnamon
- 2 grams ginger
- 1 gram nutmeg
Directions:
Preheat oven to 325 degrees. Add wet ingredients first, mix, then fold in the dry ingredients. Layer with batter and streusel and then bake for 45 minutes.
