Yes yes yes, YES this was a win. ), but I did take the noodles and beef out of the broth, and I cut it up more like a chow mein-type situation. I can’t tell if this is crazy, but next time, I’d consider just making the broth.

I was skeptical that this recipe could really impress me much, just as a basic minestrone (I’m more of a meat and potatoes person), but it was really fantastic.
